Yes, it is a long while since I posted my previous breakfast idea. There is my bircher muesliin case you haven't seen that. Here is the second installment as part of my breakfast series. My kids love this for breakfast lunch or dinner! Sometimes I will even just put the potatoes in their lunch boxes on their own.
Wash the skins of the potatoes. I try to use organic potatoes - they are one of the vegetables with the highest rates of pesticides.
Bake in oven on 180C for 40 minutes until cooked through. Depending on size of potatoes this may be shorter or longer. Remove and cut off the tops of the potatoes.
Scoop flesh into a bowl. Add a dash of milk, some grated cheese, salt and mix until combined. You could also add here shallots, paprika or mustard if you wished. Put potato mixture back into empty potato shells.
Sprinkle some more grated cheese on top. Place in oven or grill until golden.
Remove from oven and resist eating the crunch cheesy top!
I often serve with some leftover savoury mince. My kids love these for breakfast, lunch or dinner. For breakfast I would cook the potatoes the day ahead and have them ready to pop in the oven in the morning. They are also great, cold in their lunchboxes.
