The title of this post is slightly misleading. It might take you maybe 45-60 seconds to get the ingredients together and into the jar. However, the good news is that I overestimated the 4 seconds, so once you start blending it probably only takes 2-3 seconds, not 4. Seriously.
I am a fan of salads, however I am not a fan of a dry lifeless salad. I feel like it needs a dressing or sauce to bring it to life. Shop bought mayonnaise is a bit dodgy to say the least. If I can, I would much rather make my own out of fresh ingredients, avoiding horrible oils like canola etcNow the problem here is that making mayonnaise the traditional way can be slow and particular care needs to be taken to make sure it doesn't separate. Well hello, there is hope!
Two pieces of equipment is required for this recipe, a stick blender and a wide mouth jar (to fit the stick blender). I use these handy jars from IKEA, which I then store the mayonnaise in, in the fridge.

Ok, here it is.
BASIC MAYONNAISE RECIPE
120 ml Macadamia Oil
1 tablespoon lemon juice
1 teaspoon of apple cider vinegar (or extra lemon)
1 teaspoon of Dijon Mustard
2 egg yolks
Salt and Pepper to taste (I use himalayan salt)
Place all ingredients in a jar - no need to mix.
Grab stick blender and whizz for approximately 2-4 seconds. It will turn thick and creamy! Ta da, that is it! Works perfectly. Your family will love you for this recipe :)
