Wholefood Simply Orange Cake - Brisbane Food Photography

I was lucky enough to stumble across Bianca's website around 4 months ago, and her recipes have taken over my cooking world.  I haven't cooked much else in the last 4 months.  Well dinners I have, but for anything sweet I head to Wholefood Simply.  Bianca's recipes are based around nourishing wholefoods which is where I have headed with my eating.  This has also been my stepping stone into food photography and I have had immense pleasure in photographing her amazing creations.   Today I show you my all time favourite cake ever!  To the point where I have to be careful when to cook it - I almost ate the whole thing myself (seriously!).  When I think about it I can actually smell and taste, it is so moist and delicious, with coconut icing to die for.  Do you think it is worth giving a go - you bet!

Whole Orange and Carrot Cake

2 (150 grams) carrots, quartered

1 (150-200 grams) orange, quartered

1/2 cup honey or maple syrup

1/2 cup coconut flour, sifted

50 grams melted butter or melted coconut oil or macadamia oil

4 eggs

1 teaspoon bicarb soda

1 teaspoon chinese 5 spice

pinch of salt

Coconut Citrus Frosting

2 cup desiccated coconut

80 grams butter or coconut oil

4 tablespoons honey or maple syrup

100 grams melted butter or coconut oil

Instructions

Preheat your oven to 175 degrees Celcius or 350 degrees Fahrenheit. Line a square 20x20cm cake tin with baking paper.

In your blender or food processor chop the carrots and orange until very fine, add the remaining ingredients, mix well, spoon into the prepared pan and level the top. Bake for 35 minutes, cover with foil and bake for an additional 5 minutes. The cake should be golden on top and an inserted skewer will come out cleanly.

Allow cake to cool in pan before gently flipping onto a cooling rack.

To make the frosting blend the first three ingredients at high speed until very well combined, mix in the melted butter or coconut oil. Spread the frosting over the cooled cake. Enjoy.
